A tribute to the 2021 vintage. A complex top selection, part of it aged under flor yeast
A top selection from the estate's best parcels, created as a tribute to the historic 2021 vintage. Aging is split between concrete, stainless steel and wood; part undergoes gentle reduction and part rests under flor yeast, which gives the wine its distinctive traits. The wine is bottled late and unfiltered. The nose shows aromas of green apple and lemon peel alongside nuts and yeast. The palate is taut and saline, with exceptional tension, and built to age for decades.
