The ancestral method creates gentle, natural bubbles without added carbonation. Grapes are hand-harvested and direct-pressed for fermentation in stainless steel without temperature control. The wine is transferred to bottle before fermentation completes, so it finishes as pét-nat rosé. Not disgorged, unfined, unfiltered, zero SO₂ added. Dark rosé color with natural cloudiness. Aromas: red berry compote, quince, apple, floral notes. Palate: fruity, refreshing bubbles, low alcohol makes it dangerously drinkable. The quince adds aromatic complexity and subtle tannin structure. Serve cold (6-8°C) as aperitif or with light dishes.
